One of the cuisines my palate has developed a taste for in my young adult years are Asian foods. Asian dishes are packed full of flavor and are easy dishes to prepare for a solo night in or for a family of five. From start to finish, this meal took me 42 minutes (yes, I timed it), to prepare, eat, and clean up. Feel free to substitute the beef for chicken or add in extra veggies like snap peas, carrots, and bell peppers. I hope your taste buds enjoy this meal as much as mine did!
Ingredients
- 4c fresh or frozen broccoli
- 12oz sirloin
- 1 packaged riced cauliflower (I used Birds Eye Original but can substitute for rice of choice)
Sauce
- ½Tbsp. honey (squeeze bottle for ~4 seconds)
- 1/3c so sauce (I used low sodium variety)
- 1/2tsp crushed red pepper flakes (I used 4 shakes)
- 1Tbsp hoisin (squeeze bottle for 6-8 seconds)
- 1/4tsp ground ginger
- 1tsp minced garlic
- 2tsp cornstarch (more if you like a thick sauce)
Directions
1. Bring a few quarts of water to a boil, just enough to cover the broccoli when submerged. Once boiling, add the broccoli and boil until able to easily piece with a fork. Drain.
2. While the broccoli is cooking, sear sirloin to your liking. My husband made kabobs on the grill for a different meal so I used the leftover meat he prepared.
3. Whisk all the ingredients for the sauce together in a small bowl. Add the broccoli and sauce to the sirloin and simmer.
4. Cook the riced cauliflower per the package instructions. Remove cauliflower from package and place into a medium sized bowl. Season with black pepper, salt, and garlic powder to taste.
5. Divide the cauliflower evenly in two bowls or on plates. Top each with half the beef and broccoli. Pour remaining sauce over the rice bowls and enjoy!
