Ingredients
- 6 eggs
- 1/4c low-fat milk
- 1/3c feta
- 1/2c chopped spinach
- 1/3c drained and chopped sun-dried tomatoes
- Salt and pepper to taste
Directions
1. Preheat oven to 375 degrees.
2. Whisk eggs and milk together.
3. Add spinach, tomatoes, feta, salt & pepper to egg mixture.
4. Spray muffin pan with non-stick cooking spray. Pour egg mixture into 9 muffin holes or 12 for smaller egg cups.
5. Bake for 16-18 minutes. Store in the fridge in an airtight container for 3-4 days.
