Pumpkin Protein Overnight Oats

If you are like me, starting the day off with a nutrient dense breakfast can seem like a huge chore. It's hard enough getting out of bed on a cool fall morning, let alone in enough time to prepare a balanced breakfast. Most think of a hearty breakfast as consisting of eggs, bacon and toast (or a variation of this), but you can eat a complete breakfast without all the hassle and in less than half the time.


Overnight oats are a quick, easy, and mess-free way to start your day. This recipe is packed full of healthy carbohydrates, protein, and is low in fat and can be tailored to meet your specific nutritional needs.


So tomorrow morning, hit the snooze and stay snuggled in your warm bed a few extra minutes because breakfast will already be cooking. What better way to start off a fall morning than with a jar of pumpkin protein overnight oats!


Ingredients


- 1/2c 1% milk or milk of choice

- 1/2c old fashioned rolled oats

- 1/2c pure pumpkin

- 1/2 scoop vanilla Pure Protein powder or protein powder of choice

- 1tsp ground cinnamon (I added extra because I love cinnamon)

-1/2tsp pumpkin pie spice

- 1tsp stevia (can add more depending on how sweet you like it)

- Raw pecans for garnish, whole or chopped depending on preference


Directions


1. Combine all ingredients together in a mason jar. Stir until well combined

2. Screw lid on jar or cover with plastic wrap

3. Place oat mixture in the refrigerator and let sit overnight (minimum 4 hours).

4. Stir before eating. Makes 1-2 servings depending on how hungry you are!
