Pesto Chicken & Sweet Potato Quinoa Bowl

So, I'm sitting here drinking my heavily poured glass of wine (thanks self!) and am having the darnedest time thinking of something cleaver to write to get you hyped. But ya know what, screw it! This recipe is too damn good not to try!


From start to finish this took me just under an hour - a little more time consuming than I would have liked - but 100% worth it. Comment below and let me know what you think!

Ingredients

- 1lb Boneless skinless chicken breast

- 2tsp ground garlic

- 1/4 cup pesto

- 2 boil in bag tri-color quinoa packs (I used Success brand)

- 1 medium sweet potato, cut into 2 inch cubes

- 1Tbsp canola oil

- Salt & pepper to taste (for chicken, quinoa, & sweet potatoes)



Directions

1. Trim chicken and tenderize so meat is about 1 inch thick. Season with garlic, salt and pepper

2. Dice sweet potatoes and coat with canola oil. Season with garlic, salt and pepper to taste. **For sweet potatoes: If using an air fryer, turn temperature dial to 400 degrees and allow fryer to heat. Once heated, cook for 15-20 minutes, shaking basket halfway through. If using the oven, set oven temperature to 425 degrees and bake for 30-35 minutes - may turn potatoes halfway through baking

3. While potatoes are cooking, heat frying pan on medium heat and spay with non-stick cooking spray. Cook chicken, flipping after about 3 minutes, until internal temperature reaches 165 degrees.

4. While chicken and potatoes are cooking, make quinoa according to package

5. Once the chicken is thoroughly cook, remove from heat and allow to rest for 3-5 minutes. Once slightly cooled, cut chicken into bite sized pieces. Toss in pesto until coated (may add more or less pesto depending on preference!)

6. Once potatoes are done baking and quinoa is ready, place half the quinoa in the bottom of one bowl and half in a second bowl. Season with salt and pepper if desired (I do!). Then, place half of chicken on each mound of quinoa and half of sweet potatoes on top. Add one dollop of pesto to each bowl if desired. Mix all ingredients together and enjoy!
