Sometimes, the fall season doesn't always mean cool weather. It seems like every year the summer temps last longer and longer. This weekend, temperatures in Tulsa hit over 90 degrees and I was desperate for an escape from the heat but, I could not get pumpkin off my mind!
After my Saturday morning workout, I seriously considered splurging on a pumpkin smoothie from a Smoothie King, but I knew in about the same time and for a fraction of th price, I would whip up one of my own. With just 235 calories, 42g of carbs, <2g of fat, 7g fiber and 8g of protein, this smoothie was the prefect post-workout treat.
Ingredients
- 1/2c pure pumpkin
- 1/2c Dannon Light & Fit vanilla Greek yogurt
- 1tsp cinnamon
- 1/2tsp pumpkin pie spice
- 1 frozen banana
- 1-2c ice (more ice will make it thicker, less will make a thinner smoothie)
- 1/2c water (substitute coffee for an extra boost)
- Optional: 1/4c raw pecans for a nutty flavor and/or add 1 scoop of vanilla protein powder for a post-workout treat
Directions
1. Combine all ingredients in a blender or bullet
2. Blend until smooth and enjoy!
