Buffalo Chicken & Avocado Orzo Bowl

Ingredients

- 2oz Orzo, cooked according to package

- 6oz Boneless skinless chicken, cooked and shredded

- 1/2 Avocado, diced

-2Tbsp shredded mozzarella

-2Tbsp Buffalo sauce (I use Moore's original)

-3Tbsp Crispy onions (I use Fresh Gourmet)

-1Tbsp Ranch

-2Tbsp Cilantro

-2 Pinches of garlic powder

-Salt and pepper to taste


Directions

1. Boil chicken about 15-20 minutes, until cooked to internal temperature of 165 degrees

2. While chicken is cooking, cook orzo according to package. Drain thoroughly

3. Once chicken is cooked, shred and season with garlic powder, salt and pepper

4. Add buffalo sauce to chicken, stir until all chicken is coated

5. Add orzo to a bowl. Top with chicken then mozzarella, avocado, crispy onions, and cilantro

6. Drizzle ranch on top of bowl and enjoy!
