If you know me, you know I love a good bowl for dinner. Whether it be a base of lettuce, rice, or pasta - if I can toss all the ingredients together in one bowl, I'm down to eat it. One grain that I have often overlooked is orzo.
Like me, you may be wondering what exactly orzo is. All I really knew about it up until this point was that it is a type of grain that is kind of creamy. Though this may be true, orzo is more than that, Orzo is actually made of semolina flour and durum wheat and is packed with a variety of nutrients. In just 2 ounces, orzo contain 200 calories, 42g of carbs, 7g of protein, and 3 grams of fiber. In addition, the pasta, when enriched, contains vitamins and minerals including iron and some B vitamins. Bonus - it cooks perfectly in just 9 minutes!

Ingredients
- 2oz orzo, cooked according to package
- 6oz boneless skinless chicken, cooked and shredded
- 1/2 avocado, diced
-2Tbsp shredded mozzarella
-2Tbsp BBQ sauce (I use Sweet Baby Rays or Jack Daniels)
-3Tbsp Crispy onions (I use Fresh Gourmet)
-1Tbsp Ranch
-2 pinches of garlic powder
-Salt and pepper to taste
Directions
1. Boil chicken about 15-20 minutes, until cooked to internal temperature of 165 degrees
2. While chicken is cooking, cook orzo according to package. Drain thoroughly
3. Once chicken is cooked, shred and season with garlic powder, salt and pepper
4. Add BBQ sauce to chicken, stir until all chicken is coated
5. Add orzo to a bowl. Top with chicken then mozzarella, avocado, and crispy onions
6. Drizzle ranch on top of bowl and enjoy!
